Chile Relleno:
Lightly-battered Poblano pepper stuffed with cheese and covered in a light, mildly spicy red sauce
Enchiladas:
Sautéed corn tortilla folded round and traditionally filled with shredded beef, chicken or cheese, topped with red, green or mole sauce.
Mole Poblano:
A highly spiced Mexican sauce made chiefly from a variety of chili peppers, chocolate, nuts and cinnamon. Served with chicken.
Quesadilla:
A folded corn or flour tortilla filled with cheese and melted on a skillet.
