Refried Beans with Chorizo
Ingredients
- ½ package Rey Sol Premium Chorizo, skin removed
- 1 can refried beans, approximately 400 g
- ½ cup shredded Monterey Jack or Mozzarella cheese
- Kosher salt and freshly ground black pepper
Directions
- Cook the chorizo in a medium non-stick pan over medium heat, crumbling and stirring until just beginning to brown, approximately 5 minutes, drain off excess fat then add the can of beans.
- Mix well.
- Add salt and pepper to taste.
- Cook, stirring, until beans begin to boil.
- Add the shredded cheese, stir.
- Add salt and pepper to taste.
- Serve immediately.
