Refried Beans with Chorizo

Ingredients

  • ½ package Rey Sol Premium Chorizo, skin removed
  • 1 can refried beans, approximately 400 g
  • ½ cup shredded Monterey Jack or Mozzarella cheese
  • Kosher salt and freshly ground black pepper

Directions

  1. Cook the chorizo in a medium non-stick pan over medium heat, crumbling and stirring until just beginning to brown, approximately 5 minutes, drain off excess fat then add the can of beans.
  2. Mix well.
  3. Add salt and pepper to taste.
  4. Cook, stirring, until beans begin to boil.
  5. Add the shredded cheese, stir.
  6. Add salt and pepper to taste.
  7. Serve immediately.
